oooooooh i get what you mean now. (note: i don't know if these numbers are exact, but it works the same way)
so let's use the dexterity prof as an example. say you put one point into it; you'll get a +20 added to the pet's dexterity stat. if you add another point, it's a +30 addition to the dexterity stat. but, instead of the +30 overriding the +20, they add together, giving you a combined total of +50. it works like that for every stat prof.
as for what you said, if you catch a level 60, for example, it will be +191 because the pet is at a higher level than 0. the number is balanced out to match the pet's level, so it is literally just a higher leveled equivalent to the "level zero is +20" situation.

Oh, no, that actually makes a lot of sense now :) You can add points to them if you want then. Looks like I can attune all my level 30s now too!
