That's correct.
You can work out which one is dominant by looking at the Generator:
(AA) Iridescent Gems
(CC) Sunset Gems
Therefore the offspring should show Iridescent Gems.
That said, some pets also carry hidden traits. For example, if the two Bulbori you're talking about are pure AA and CC, the offspring will actually be AC - that offspring could then potentially pass on the A trait or the C trait.
