How do you know what level your pets have to be able to battle?

In big letters over the list of possible challengers, it tells you the level range.
"Gladiator: Aspiring (Level 0-25)"
Once you defeat the first five challengers, the second set is for lv26-50.
It's common practice to only use lv25 and lv50 pets with philters of unlearning, to get the maximum potential out of the pets. But any pet within the level range can be used.
