I have about 200 chocolate coins from fall fest (too lazy to use them)....what do I do with 'em? (Same question for frost tokens/snowmen, of which I have WAY fewer)

and do expired tokens do anything?

they become Expired tokens of whatever sort at the start of the next matching fest, and Expired tokens (not non-expired ones) can be sold for 500g each (being sold for 500g to the site is their only purpose)

yes, all (except legendary-level items used to speed up the growth of Exclusives-in-progress like Quick Drying Agent. I don't know what happens to those Used from the inventory but not used to make pets (because I've never had any in that state that I haven't used), but the ones in the inventory remain intact.)
