What do I do with my extra Catalysts and boxes of brewing supplies? Do I save them for next year? Will they still be viable?

You... can't really do much with them. Next year, you almost definitely won't be able to use them for brewing, /but/ any leftover stuff turns into expired tokens that can be sold to the game for 500g each.

when the next fall festival starts, I think. So like a year approximately.

Yes, this happens at the very beginning of next year's fest for the same season. So Fall Fest 2018 stuff will expire just before Fall Fest 2019; Winter Fest 2018-19 stuff will expire just before Winter Fest 2019-20, and so on.
