Are we eventually going to be able to have four pets in our party?

Yes, though I'm not sure when. The max will eventually be 6 pets.

Wow really, I wonder how they will all fit on the battle screen 0.o'

I think we'll be able to have three out at a time, with three in reserve.
And the enemies will work much like they do in, well, I call them "marathons", where they replace their fallen comrades. There are plenty in the Dungeon of the Forsaken.
