The items highlighted in red when you go to stuff a stocking, does that mean they do not want those items?

Correct. I'm on a laptop and when I hover the mouse over a red item, it has a little popup that says "Player has Excluded this Item". So that player has excluded that item on their wishlist and you will not be able to give it to them.
