Some sort of countdown showing how long it will be before a pet reaches its next level of maturity would be really helpful. That way we would know how long before an eggling is ready to hatch, how long before a hatchling will show its visible mutations as an adolescent, and how long before an adolescent will be ready to breed as an adult. This could just be a little countdown number next to their age, maybe? Or a countdown number in one corner of their photo?

Actually, this already exists! Although you do have to memorize some numbers.
For example, on this pet, next to Maturity: Adolescent it says (635/648). The numbers are the maturity hours. Here's the full breakdown:
Eggling: 0-71
Hatchling: 72-215
Adolescent: 216-647
Adult: 648
A pet has to be genetically tested for it to show up. There are a lot of people with unlimited test kits willing to help out for free if you can't get one of your own.

and you don't even need to genetically test an eggling, either- the bar in their genetics section (which later becomes their hunger meter) shows the "X/72" counter to when they'll be ready to hatch

I was wondering why some had that number and some didn't. Interesting to know that it's caused by genetic testing. That seems pretty arbitrary to me, though. I don't think you should need to genetically test a pet to know how close it is to becoming the next level of maturity. It's pretty standard in most games that you get to know that without having to do anything special. It's good to know that that information is there for egglings at least, though!

What i would like is a "this pet will reach adulthood on -insert date- then i can stop using "how many days till" to work out when my next gen of pets can be bred xD

Honestly, I would prefer this as well.
It can be very hard for me to remember numbers, so I constantly have to refer back to a 'okay, this means it will be an adolescent in X hours, which is Y days, and an adult in Z days)
