Hm. You could eliminate cheating via using a "solver" by requiring players to "show their work," that is, to explain how they solved the Sudoku.

1 this is almost impossible! The 6s and 7s stuff it up every time!

It was more complicated to fill the board than solve the puzzle xD But it was fun!
