I'd take one of the strays, or adopt from a shelter. Always adopt from shelters...petco/petsmart usually have local shelters come in and put cats up for adoption so that's a good option as well. Also shelter pets have all their shots and such so it's cheaper too.
Though honestly you'd be fine just having one cat too. Cats are like people in that they have very different personalities. Being an only pet won't harm them as long as you give them enough attention and play with them...though when they get older at least my cats in the past sleep 90% of the time and just want food LOL.
Some cats don't even like other cats or animals, so it's hit and miss.
