Alright! Let's figure out the first one first- what's your characters reason for not knowing the world? Have they just arrived or is it memory stuff?

Alright! That would make your character a magical being, then. They're called 'fey' in their world.
I'll let you choose 1-3 elements, which I listed before. The only rule is no arial or iron genes, at least mostly. I'd say 25% bird genes at most, which would mean at closest their mother/father was half bird.
(Also yes I'm calling arial & irons birds, it's a lot easier)

Seelie, Ignis, and Terra. I might as well use my major DND character, and if so, could said character have the amnesia due to being sealed away maybe 25+ years ago?

That would depend on who your DND character is! Elements have set species so you will likely have to make (physical) changes regardless.
