I am trying to get a mystical nixi essence & I was wondering if it was possible for them to drop from nurturing or if I could only get them from the diamond shop?

No, they don't drop from nurturing or battling. They are only available from the diamond shop, or rarely from forum games (or buying from other players, of course).
