I caught two themed pets from the Umbra veil but they don't show up in my stables and it's becoming irritating as i spent hours looking for them just to have them caught and not show up....

They are most likely running away if you can't find them anywhere in your possession.
After using a Trap, you can check the Battle Log to see what the results of the Trap were. Sometimes it will fail and the pet will run away.
