I know you have to hatch the egg and they hatch around 3-5 days, but if you don't hatch the egg will it hatch on it's own after a while or no?

yes it will auto hatch

an egg will always ask to hatch at day 3 or earlier (depending on if it was found or bred/bought from shop/won/created via fest function, and on how many nurtures it gets). The literal latest they can hatch is the start of day 4, as autohatching occurs 24 hours after an egg hits 72 hours.
