So I noticed that when an egg hatched, the genes (if any) are listed right away. Do mutations show up after they become an adolescent?

yes.
You can see the mutations in the genetics section immediately if the pet has been gene tested, but they don't show up on the art until adolescence, and they don't show in the genetics section until then if the pet is untested.
