I've been wondering, how many pokes increases development? Because I've seen people saying five pokes speeds it up by an hour, and others that one poke does an hour.

What you're likely seeing is variation based on individual eggs- that is, it takes five pokes to up the timer an hour, but if I had an egg that was at 4 pokes, or 14, or 24, it would need one more poke to bring it up to an increment of five, upping its hour counter.
