I know that you can nurture pets for Essences, but let's just say you want a certain Essence breed, is there a way to search and nurture pets of a specific breed?

I think you would just have to go through and only nurture the types of Sylesties you want to get an essence from. You could always suggest a species-selecting option on the nurturing page to Krin, though.

I use the "Advanced Search" button on the left of the page.
Then I click the species I want and either hatchling or eggling in the search features.
I find this much, much easier for nurturing a specific species than the nurturing page! (which has everything mixed together)
