So, I completed the Finding Saerielle quest, but when I go to my quest log to claim the reward, I find the new interface without that quest there. It's not in the old interface either. I also can't see either of the quests I just accepted on the old interface. What happened?

Thank you for bringing this to my attention.
It looks like there was a typo in the query to update the quest log when the quest was accepted. The typo has been fixed and all affected players should have their quest log properly updated.
Looks like this has affected over 2,000 players and you were the first to bring this to my attention lol. So thank you.

I just got in after a few hours break and it appears my quest log was affected too.
Should I just complete the quest and it will be ok or is it still something wrong? :)
