Is there a way to put eggs back into your inventory?

There is no way to put eggs (or any festival currency) back into your inventory. Generally speaking, at the end of a festival any festival currency you have will be converted into gold automatically.
Once a festival has ended any currency still sitting in your inventory is pretty much only useful as broker fodder. So if you are short on gold near the end of the fest I would recommend using any eggs you have in your inventory so they can be converted into gold.
