Is there a level cap that I'm not aware of? One of my Sylesti is at level 60 and there experience says 104% but they didn't grow to level 61.....

Yes. Currently, the level cap is level 60. It will be increased to 75 when the MegaZone is released.

At the moment the only player with a pet above level 60 is the admin (Krinadon)
They are working on a massive update called the "Mega Zone" which will continue on with the adventure and give access to new areas on top of many other things.
When this update is implemented us regular players will be able to level our pets further so that we can take on these new challenges.
So yes, currently the level cap is 60 but we will eventually be able to level past that point.
I am no authority on this subject of this update so you may want to check some threads in the News and Announcements section of the forums.
