I'm running out of space in my stable and would like to keep some of my pets in the hatchery until I can get my stable expanded. Is it possible to store some pets in the hatchery indefinitely? If so, how is this done?

So hatched pets are transferred automatically after a specific period of time? Is that accurate? How long does it typically take for a pet to become mature and be transferred to your stables?

Yes, hatched pets automatically move to the hatchery when they become adults. This usually happens between 26 and 28 days (though it can happen a little earlier if they received a lot of nurturing as eggs/hatchlings). The exact time that your pet becomes an adult has to do with its maturity which can be viewed in its image code. The exact number of hours for adulthood is 648. Also, you can only see the exact number of hours if you have your pets tested.
