I wasn't ever fully sure about this other than appearance, but is there any way of telling what kind of Sylesti is in each egg on Scale Shop? (Before buying)

Also when nurturing someone else's eggs or hatchlings, can you collect essences from those? I have collected an essence from one of mine but am not sure about other ones.

No, there's no way of telling what sylesti is inside the egg from the scale shop until you buy them.

And yes, you can get essences from nurturing other's eggs. Getting essence from nurturing is a random rare drop, and doesn't matter whether the egg is yours or not.
