I know a project costs some things and that you need dye and you have to do a ton of breeding but, what exactly is it and how do you profit from it?

Breeding projects are generally for personal interests rather than monetary gain. Usually you need one of either dyes or a lot of breeding, not both. It's basically coming up with some color scheme and set of genes/mutations that you like and either breeding towards it, or obtaining a pet that already has the genes/mutations you want and dyeing it to be the colors you want.
If you decide to breed towards your desired pet, you will need essence to generate Sylestis with carried traits, then breeding towards your goal.
Though you can also have a breeding project with Themed (Tagged) pets. Tagged and Themed are virtually synonymous. Tagged pets are found during festivals and will be marked in their genetics section as such:
Since tagged pets have set colors, the breeding project is just towards one's desired mutations. These pets are 'purebred' pets. As they have a direct lineage to the tagged pets. While purebred pets can actually sell for a nice sum, the tagged pets are quite costly, so you won't actually be making much money (if any) in the end.
Lastly, there are stat breeding projects, where people breed to increase the base stats of pets. These can sell for quite a bit as well. These pets start off with roughly 100 points of strength, intelligence, etc. at level 0. And 2k health as well. Stat breeding projects require philters, which can add up if done with prismatic philters.
