Is there a way to tell if a captured pet is rare, epic or legendary and how many stars it had?

No, there no icon or anything after it's caught. Usually, though, if it is a caught pet an uncommon will have 1 visible trait, a rare will have 1 visible / 1 hidden, and an epic will have 2 visible traits. However bred pets are not considered the same rarity.

The stars only tell how difficult the pet was, not it's rarity.
