Mmh, that's a good question. If we inculde legendaries, I'd say Mewtwo, but if it's non legendary, then I'm not sure. I just have so many that I love. But I can tell you my favorites of each type.

Grass: Sceptile and Breloom
Water: Feraligatr
Fire: One of my favorite types, so it's kida hard to choose. I'd say Houndoom?
Electrik: Ampharos and Luxray
Psychic: Espeon, Gardevoir and Meowstic
Dark: Absol.
Ice: Weavile
Fairy: Sylveon
Dragon: Flygon
Steel: Tie between Skarmory and Mawile
Fighting: Lucario
Ground: Garchomp
Rock: Lycanroc
Flying: Noctowl and Chatot.
Ghost: Froslass
Bug: Ariados
Poison: Crobat
Normal: Eevee and Zangoose
