Eggs take up to 72 hours to hatch. You can see the progress on the pet's profile page, near the bottom, there's a __/72, that's the current maturity out of 72 hours. Once the pet reaches 72, it can be hatched.

Pets will age with time.

Pets become hatchlings at 72 hours, adolescents at 216 hours, and adults at 648 hours. Note that this has to do with their maturity, which can only be seen in the image code if your pet is genetically tested; it is not related to the age on your pet's profile, which keeps track of the time since it was created..

Maturity increases per hour, and there are some ways to increase it.
For eggs, every 5 clicks increase maturity by 1 hour.
For hatchlings, every 2 page views increase maturity by 1 hour.
For adolescents, you can use magical pies, which increases maturity by 144 hours.

How come some of the offspring in the first example only had 1 GP? Unless this site doesn't use Mendelian genetics, shouldn't all the offspring have 2 GP, one in each slot?

It does follow mendelian genetics. The genes here work something like our blood type, just that the "N" (no trait) here is like our "O" (no antigen), but dominant instead of recessive.

So a blood type AO and BO pairing in our world, where there's 25% chance to get either AO, BO, AB, or OO, translates to a NA and NB pairing, where there's 25% chance of getting either NA, NB, AB, or NN; where NA and NB are carried traits (1 gp), AB has visible A trait and hidden B trait (2 gp), and NN had no traits (0 gp).

Is there an age limit or offspring limit to how many times a pet can breed?

No. the only breeding limit is the female breeding cool down time: 3 days for regular pets, 7 days for fabled pets.

Otherwise, there are no limits to how many times a pet can be bred, or for how long.

Hi, do you know the quickest way to get a resetting kit? The greater one? I have heard some ways to do it without buying diamonds, but they all take a REALLY long time!
