It tells you in the dialogue text when you enter a new room.

So when it tells you the color, does it mean you're entering that colored room, or exiting that colored room?

When you choose a mirror, it'll say you entered the room, and what the room colour is; so the colour is for the room you entered.

I made a new map. I think it's a little easier to understand.
The lines are one way paths originating from the matching circles.
For example, the Amethyst room can bring you to the Sapphire room, but the Sapphire room can only bring you to the Bronze or Jade rooms. The left and right forks correspond to the left and right mirrors.
